Ground Beef & Cauliflower Rice Medley

Occasionally I come across a recipe that works well for our family and is worth sharing. This one is clean, easy, simple and tasty. The boys thought it was pretty good and didn’t mind the cauliflower which is normally not one of their favorites. Here’s my version of the grated cauliflower rice dish I was told about (hat tip to Kristin B.) and since there’s no link to a fancy food page I will do my best to create a follow-able recipe…

Ground Beef & Cauliflower Rice Medley in Pepper Boats

You will need:
1 pound ground beef/lamb
1 medium head of cauliflower
2 red/yellow/orange peppers
1-2 carrots
Salt
Black Pepper
Minced onion
Garlic/Garlic powder
Butter/olive oil

Takes about 30 minutes.

Prep work…
Cut peppers in 1/3 or 1/4 to create little boats.
Slice carrots.
Grate cauliflower using cheese grater.

1. Brown beef in pan on medium heat. Add salt, pepper, garlic and onion. A sprinkle of each or to taste.

**Important to keep the fat/juice in pan.

1a. If cooking peppers, start that process now, ideally done with low to medium heat. I grilled them on the BBQ a few minutes each side.

2. When almost done, take beef out of the pan, leaving as much juice in the pan as possible. Add cauliflower and carrots. Add butter and/or olive oil to sauté with. The leaner the beef the more fat you will have to add on this step.

3. Mix and sauté several minutes over medium heat.

4. After cooked, add beef back to the pan and mix it all together.

5. Spoon the mix onto a plate to enjoy by itself, onto salad greens for a nice salad or into your pepper boats for little taco like entrees.

You can also add any other veggies or spices to the medley.
