Veggie Chips & Spinach Cookies

Hi folks! It may have been a while since I’ve posted anything but I’ve still been Bare 5’n it, doing my usual things and staying busy (to say the least). I have several things in the works and have been thinking about quite a few others which is probably why nearly nothing has actually gotten done. Nonetheless I wanted to get back into the groove of posting again so thought I’d start simple by sharing a couple new ways to eat your vegetables…

Forager Organic Vegetable Chips

People have been trying to pull off veggie chips for a long time. I’ve tried quite a few of them and they’re ok at best, terrible at worst, and often composed of less than ideal ingredients. So when I came across yet another version today I didn’t have my hopes up. However after a glance at the ingredients I was intrigued… 

 
Not bad at all! So I bought them and tried them out. They were good. Really good actually. Very chippy with just a little saltiness and a hint of vegetable taste. If you’re gonna eat chips this is a pretty good way to do it. Vegetables as the base, high oleic oil, a few varied starches and just onion/sea salt as flavoring. Simple and tasty chips. Hidden Garden Cocoa Cherry Cookies with Spinach

Ok, these are cookies with a hint of spinach so they don’t exactly count as veggie cookies but I still found them to be a pretty good treat with nice ingredients…


They are basically gluten free chocolate cookies with a little cherry flavor that reminds me of amaretto. My wife and I liked them as did two of my kids but the other two didn’t care for them. Here is the Hidden Garden website that also has a few more cool cookies/products. Also worth a try.
